Super simple beet and goat cheese appies, with fresh chopped dill
Beets are one of my culinary passions. I’ve grated ’em up into chocolate cake, and used the juice to dye the frosting. I’ve mashed beets up into pierogi (stay tuned for the recipe!). And, of course, I’ve sliced ’em up for these delicious, super simple appies: beet goat cheese appetizers. They’re so colourful, and give every dish a sweet-yet-earthy flavour. Pair with goat cheese to add richness, and fresh dill to contrast.
- 2–3 beets (say 1/2 a beet per person)
- goat cheese
- fresh dill, chopped
- cracked salt and pepper
Start by boiling the beets, until they’re soft and cooked through. Remove from heat, and set them out to cool. Once they’re cold enough that you can touch them, slice the beets up into thin rounds.
Set your beet slices out on your platter or board. Scoop wee spoonfuls of goat cheese onto the rounds, and top with freshly chopped dill. Crack salt and pepper on top.
And you’re done! I served this as an appetizer before serving homemade pierogi and cabbage rolls, and I think they would serve other dishes with similar, earthy flavour profiles.
